I don't mean assignment submissions, I mean actual assignments so that I can be more organized with things that are due. Thanks!

It sounds like you'd like to download the Assignments which include your directions to your students...but not the actual submissions from students. One way to do this is to use the course export option provided in this Guide: How do I export a Canvas course?. Once you save the *.imscc file to your computer, change the file extension from *.imscc to *.zip, and then unzip the file to a folder of your choosing. Open the folder, and you'll see several folders that have long strings of characters (letter and numbers). You'll have to go through those folders, but you should find some HTML files in there...one for each of your assignments. You could then copy those HTML files all to a single folder so that you can organize them how you want. Would this work for your needs? I hope this helps, Lane.
Unfortunately, I am a student, so I do not see those same options in my Canvas profile.
Try this, Lane Wagner: How do I view course content offline as an ePub file as a student? If that does not work, the other option is to print from the browser, but instead of printing, save the instructions as a .pdf.
