If I delete a student from a course page, will I still be able to view their assignments/grades in Canvas?
Kristen, if you delete a student from a course you will no longer be able to view their assignments/grades in Canvas. Yet, if you re-add them to the course all of their course content (including grades and assignments) will come back up.
Yet, you can "conclude" the student's enrollment you will still be able to access the student's grades. Here are some guides that will help you with this:

Hi Kona,Do you know if its possible to completely remove all student history of grades/activity? I wouldn't want to do this for any real students but I have a few dummy accounts that I use for testing and I'm currently running a few transition tests and would love to have some of my dummy accounts start with a clean slate, without having to create new enrolments in our student management system.Is that possible at all?CheersJoel
Joel, I'm honestly not completely sure, but from previous experience with things similar to this my gut is saying no. It seems like things in Canvas tend to stick around even after you've deleted them. I think this is part of the whole "cloud" experience. Yet, I'm not 100% sure so I'm going to share this with the Canvas Developers and Canvas Admins to see if they can help.
Thanks Kona,I spoke with Amelia on this as well and she checked with the development team who confirmed, it isn't an option. I'll just keep creating dummy accounts in our student management system and running the tests that way.CheersJoel

The only way to do this is with the "Student View" at the course level. This is a dummy student built by Canvas
Reset Student Button: This will clear all the history for this student at the course level.

I'm used to the student view option but it's of no use in this instance as it does not link back to a student management system. my organisation uses VETtrak and as I prepare a transition, I need to run the students through both systems to test if the set up of our integration works as planned or not.
