How do I create a page where students can upload documents and then those document be sent to me via email?

Quick question for you, is there an advantage to getting the assignment outside of Canvas? Most would grade the assignments within DocViewer (see How do I use DocViewer in Canvas assignments as an instructor?)
Could the same be achieved by adjusting your notification settings to get an email whenever you get submissions? How do I set my Canvas notification preferences as an instructor?
My question has changed via a discussion. I need to have a page where students can upload a document and only I can see (no other student or teacher can see it).

What is the nature of the information sensitivity? If needed, I'd suggest perhaps changing this to a "No Submission" assignment and having them email you directly and you grading as such. This does cause some issues should your institution ever get audited and needed documentation to back up the grade, but it's not unheard of. Just depends on your accrediting body.
As a point of interest, no one can access your course unless they are also an instructor in your course or an admin within your School's instance.
Just trying to best understand to best help answer.
