When I upload and change my profile picture on canvas, after a day or a few hours, the profile picture will always revert back to my default picture.

One possibility may be that your school is bringing in profile pictures from another source, and those are considered "official" profile pictures at your school, and so they may be reverting back to those photos. Do you know if that may be the case at your school?
Another option might be for you to clear your cache/browsing history in your browser. If you clear your history, close your browser, and then re-start your browser, does it keep your profile picture that you wanted?

It's probably because my default picture is the "official" profile picture, is there any way to bypass that? I've seen other students having their own profile picture.

To be completely honest, I'm not sure if there are ways to bypass that or not. You may need to reach out to someone at your school who is a Canvas admin for your Canvas environment to see if that's even a possibility. I found this page on the University of the Pacific website (I hope I got your school right based on your e-mail address) that may be of help to you (How Do I Get Help Using Canvas?).
I have been reviewing older questions that were posted here in the Canvas Community, and I wanted to check in with you once more because there hasn't been any new activity in this topic for four months. I am hopeful that you've been able to check with people at your school to see what their policy is on Canvas profile pictures. That being said, if your school does allow for uploading your own profile picture and it is not "sticking", I would recommend that you reach out to Canvas support by clicking on the "Help" icon on the left side of your Canvas environment.
