My powerpoints with voiceover are much too large to upload to Canvas easily, so I planned to put them on YouTube, but when I convert them to Video mp4 or .mov, they lose the audio component every time, no matter what I try. I have a Mac and 2016 Powerpoint software.

It has been a known issue for PPT 2016 and MAC, I have faculty complained about the same problem in multiple times, the temp solution is bypassing the built-in converter in PPT and use a third party one, such as this one: Wondershare PPT2Video. I suggest you switch to a PC and try it out again.
It said the glitch is due to the compression of audio files, MS is working on a solution, but I am not sure if the patch is out yet. Ironically it was also said, if your file is not so big, and you do have a powerful processor on your MAC, it sometimes works. A better alternative is to use a screen capture program such as Captivate or SnagIt rather than PPT's record slide show.
Another common mistake some users tend to make is that they did not wait long enough for the system to complete the rendering of voice-over slides into mp4. If you have a large file size and you embedded video or other media in your slides, it will take pretty long to finish converting. The indicator of completion is the process bar located under the interface, as shown:
Make sure you reach full bar before you close the program.
