You actually weight assignment in Assignment Groups as described here How do I weight the final course grade based on assignment groups? Currently you cannot weight an individual assignment unless it is in its own weighted assignment group.
Currently no way to change name of gradebook columns except by changing the name of an assignment. None of the standard UI columns are editable. I remember seeing something in this Community about a work-round for this, but can't find it now.
