how do I copy a quiz from 1 course over into another course?

The easiest way to do this is to use the course import tool available to you, and then you'll be selecting specific course content. Check out this Guide for more information: How do I select specific content as part of a course import? Note, you will want to be logged into the course where you want to copy/import the content into. So, if you have a quiz in Course A, and you want to copy/import that course into Course B, you'll want to be logged into Course B, and then follow the directions outlined in the link I gave you. I realize this feature has been mentioned before, but you can't imagine the look of disappointment when I tell teachers that they can't easily duplicate a quiz within an existing course. Would be SO GREAT for people who give similar quizzes each day or who want to make accommodations for special needs students.
For the same quiz you can give different time limits and availability dates/times by student. Are there other differences with the quiz that your Instructors need?
The same format of quiz repeated daily is the most frequent request-exit ticket types of formative assessments. Dates/times are rarely the type of accommodation. It's usually audio enhanced questions or slightly easier questions than the original given to all students.
Ah yes, then you'd definitely want an easy way to copy quizzes!
