Can someone please tell me how to get my avatar into Canvas?
I see other students' pictures in discussions, etc., but I cannot find how to do that.
Ah, sorry, missed that you were asking about how to do this for the test student. No, as far as I'm aware, you can't add a profile picture for a test student. I'm guessing because this isn't a "real" student account and was made to be wiped out/reset, etc. If you want a "real" fake student, you'd need to talk to your Canvas Admin's/Help Desk.

Once you add your picture this way it will show up for discussions and other places you post things in Canvas.

I tried doing a little more digging about your question and found that you cannot upload a photo/new profile picture as a test student. Because the account for the Test Student is really you, you receive this message when you try to do so:

Hi Test Student! (I can't @ tag you because there are numerous users called "Test Student" here in the community.) I'm going to go a bit parenthetical here, by endorsing Kona Jones's suggestion about asking your school to create a "real" fake student for you and enrolling that student in all of your courses, if your school allows that. I greatly appreciate the utility of the Test Student--and I employ that feature often--but in order to truly see a course as a "real" student does, you need a real fake student.
I use Demo Student by logging into my course in a separate browser so I can be logged in as a teacher in one browser and as Demo in another. This allows me to troubleshoot all sorts of issues.
