I have successfully created a new quiz/assignment using the beta LTI but can't seem to view any reports regarding said assessment.

Hi Jake VanWagner, I am also in the Quizzes LTI beta group. If you go back into the quiz you created under Assignments, you should see an option at the top for Reports. Clicking on this will give you the option for either an item analysis or outcome analysis (see below).

For both of these analysis reports are empty
I cannot see who has answered what question correctly. The log files are too detailed and jumbled up across all the students.
I'm sorry to hear this F Latulipe. You might contact Canvas support and let them know the problem you are facing. Even though Quizzes LTI is still in Beta, I have contacted support for a couple of times and they have responded very quickly. If you do contact support and they have a solution, please let us know and if I find anything helpful I will update the thread as well!

I wanted to check in with you because I noticed that we have not heard back from you since you first posted this question on November 30, 2017. It looks like Kelley L. Meeusen and Eric Werth have provided you with some feedback. (And, as a quick FYI ... the new Quizzes.Next quizzing engine is now out of beta...per this set of Release Notes.) Have you had an opportunity to review Kelley's and Eric's feedback? Did any of their replies help to answer your question? Or, are you still looking for some help with getting reports from the new Quizzes.Next quizzing engine? If you feel that either Kelley or Eric has helped to answer your question, please go ahead and mark one of their responses as "Correct".
