How do I delete a student's uploaded assignment file as an instructor?
Hi Vickie. I tried to do this myself not long ago. I have a class I was using for training faculty and submitted a paper a student had sent me on accident as the file name was very general. I looked for a way to delete this submission but did not find a way.
I did discover this idea that is listed as on radar now, so maybe the feature will be added in the future.

Unfortunately you are correct that it isn’t possible to delete an assignment submission (or a quiz submission for that matter).
It seems that the only recourse is to delete the entire assignment, which may not be in the best interest of the teacher or the rest of the class!
Megan, why would you need to delete the entire assignment? I have students accidentally upload the wrong thing a few times a semester and it’s not a big deal. I just ask them to upload the correct one or sometimes they realize it before I do and upload the correct one. Students can resubmit to assignments as many times as they want as long as the assignment is open.
Do the previous submissions get deleted when a new one is submitted?
Megan, No, submissions are never deleted, but for the student the new submission replaces the old submission - so students only see/can access the most recent submission. For the Instructor the new submission is the one that automatically shows up in Speedgrader, but if you click through the pull down (for each student) you can see previous submissions.
The teacher wants the file that the student submitted deleted from his Canvas course. I've put in a ticket to see if that can be done.
