Is there a way to "lock' the default email account for students so that it remains the one assigned by the college?
Would the option under the Account Settings -> Features (section) -> Users can delete their institution-assigned email address work? Here is a screenshot:
Looks like if it is not selected, then the users cannot remove their institution-assigned address.

Yes, Rebeca is correct, you can prevent students from deleting their Institution assigned email address from Canvas. Yet, you can't prevent them from adding another email address and switching their preferences over to that email address.
Well I am feeling dumb right now. I overlooked that option multiple times. Yes, the students will be able to add an email address and change their default but our college policy dictates we correspond via college email so at least this will correct them from deleting the college address.
