Is it possible to hide a quiz (questions and answers) after it has been published and students have submitted their responses?

Once a student has submitted to any graded content in Canvas, t6hat content can no longer be unpublished.
If you are concerned about managing student access to graded content, you can include an "Available Until" date for the item (some access still available - What options can I set in a quiz?) or you could mute the quiz (more restrictive, but students cannot even see scores in their grades area - How do I mute or unmute an assignment in the Gradebook? ).
Of note, In quiz options you can prevent students from seeing their quiz responses and correct answers in various combinations.

Joseph, to add to what Kelley said, the quiz setting that allows students to see their grade (which muting prevents) just not the quiz questions or answers, is the box that allows students to see their quiz responses. You need to uncheck this box and by doing so students will see their grade, but not the questions, their responses, or any answers.
