I'd like to create an academic advisor course in Canvas. Is there a way to post student schedules for 30 students but isolate each so that each student only sees his/her schedule?

I don't know a way to do this using native Canvas functionality, so I am going to share your question with the Canvas Developers group, where there is some talent for designing customized functionality for Canvas.
When I need to do something like this, I do it by creating an Assignment and then putting in the student-by-student information as Submission Comments in Speedgrader. Students can then see the information on their Grades page by viewing comments or by going to the assignment page and looking at the comment there.
If you don't want them turning in anything as a result of the information, make it a "no submission" assignment.
(I use this to do things like share student logins for other sites that students need to do some of their assignments. I also use this to share scanned, graded versions of tests they take in person.)
