How can I list assignments by due date? Right now they keep switching to alphabetical order
Michael, are you a student or a teacher? Where is this happening? Assignments page? Grades? If you are a teacher and this is happening on grades, are you using the new gradebook?

I am a teacher. This occurred in the assignments section. I linked my Pearson Mastering A&P course to my Canvas course so that my students can access their Pearson homework directly through Canvas with a single login.
After syncing the gradebook between the two platforms the order of the assignments changed from due date to alphabetical. I manually rearranged the order back to due date. Finally, I added four exam placeholders to the assignments section so that I could record their grades in the gradebook. Once I did that, the assignments reverted back to alphabetical order. Once again I had to manually rearrange the assignment order to due date.

That is not normal behavior for the assignments to automatically reorder themselves. My experience so far with Canvas has been that the method content enters Canvas can slightly affect it's behavior. So the fact that they are imported from a 3rd party site might be part of the issue.
Along with offering that thought I wanted to remind you that at the end of the Syllabus page all assignments are listed and linked in chronological order with their name and due date. The students will see the assignments show up in the To-do list as the due date approaches.

Yes I saw that, I just didn’t want the students to get confused if the two list were not consistent.
I also noticed that I received an error when I listed the date of the final exam as December 10th as being after the date that class ends, even though I chose a date of December 15th as the end of the semester. When I chose December 6th as the date, the error message went away. Why is that?
I would recommend chatting with Support about both of these issues. There is probably something going on blow surface level that they will be able to diagnose more effectively...

In your global side navigation you will have a Question mark icon (?) that will open up the help options you have available. If you select that you will be able to choose the Chat option. A couple notes on this:

Michael, as Jared pointed out, these may vary depending on your institution. Since you don't have the Chat option available, please select Report a Problem (How do I get help with Canvas as an instructor?) to initiate a case with Canvas Support.
