I have just taken a great course in HTML and CSS, How can I alter the CSS of my Canvas site? Are there any style alternatives available to us?

Jeffrey, the style guide site is no longer being maintained by our engineers, and we would encourage you to look through instructure-ui : UI libraries made by Instructure Inc. (5.20.1) .
I've also shared your question with the Canvas Developers and Instructional Designers groups to get more eyes on it. You won't have to join the groups to see group members' responses and suggestions appear under this prompt, but given your newly attained HTML and CSS skills, you'll probably want to join—and you can easily do so by clicking on the link to the group and selecting Join Group from the Actions dropdown at the upper right of the page.

Unfortunately, InstUI isn't for the end user or the RCE (Rich Content Editor) either, its building blocks for using Canvas UI features inside LTI's...
Stefanie directed you toward the Instructional Designers group. They will probably have the best tools, guides and resources for building more robust content inside the Canvas RCE.
You can directly apply CSS styles using the RCE and the style="" attribute in your HTML tags. This is not the best way, but it's a start. Just click on the HTML Editor when editing the page in Canvas.
The only way to systematically apply CSS to your HTML content is through Canvas Themes, but this feature is available at the Institution/Instance/Admin level not the course level. How do I create a theme for an account using the Theme Editor?
