Hi, Does anyone know if course announcements are also sent out to students' email addresses? Is there a menu option to change this setting?

Course 'announcements' do NOT automatically send to user email addresses, or even 'messaging' inboxes within Canvas. There is NOT a setting to proactively send 'announcements' to email addresses or messaging.
However, users do have the ability to set their 'notification' preferences to forward course 'announcements' to their designated email addresses, but this is on a per user account settings basis.
Both 'announcements' and 'messages' stay within Canvas and the course for which they are constructed, except where students/users have set their 'notification' preferences to forward them to a designated email address.

A minor point of expansion, Paul Loosemore, is that the default notification settings do send email notifications for announcements asap so if a user has done nothing, that behavior will be the default.

Paul, greetings and welcome to the Community! Technically yes, they can, but it depends on how they have their notification preferences set-up - How do I set my Canvas notification preferences as a student?
What I do is tell my students at the beginning of the semester to go to their notification preferences and set them up accordingly - so I say which I'd like them to have set as ASAP. I also give them the guide I referenced above so they know how to do this.
