How do I @mention someone?

You actually demonstrated how to do that in your Question..........
Auto-complete will start providing a list as you type, when you see the correct dude or dudette listed, simply click on her or his name.
Easier yet, simply right-click the the person's name in the Community, and choose "Copy Link Location" from the pop-up menu, then paste the link where you want it.

To mention someone in the community just start with the @ symbol and then start typing their name. If you can't find the person you're looking for in the pop up after you start typing their name you may need to use an _ (underscore) to have the search combine the first and last name.
If it is someone that you're wanting to mention that is already posted on a topic within the community you can simply click on their name and drag it down into the reply window.
