Is this a shared table that everyone fills in, or does each person get their own copy? If it's meant to be shared; you could create a Page in Canvas and set it so that it can be edited by both Teachers and Student. Create the table and then publish the page so students can come in and add the information. Since it's just a page it wouldn't add a grade column to the Grades area or let you use SpeedGrader
If it's not a shared table I have a couple of suggestions.
1 - create the Table as a Word file or Adobe Acrobat as a form. Post the file in the Assignment instructions and have students download the file, edit it, and then submit it to the assignment. This method works particularly well in a mobile environment. Using Canvas Student if they download a PDF file, they can use the DocViewer to add annotations (fill in) and then submit the file again all in one process. The last option I have, which also may be the easiest; is to create the table in the instructions for the Assignment or even as an Essay Question in a quiz. If using an Assignment, set the Submission type to Online and check the box for Text Entry. Tell your students to Copy the table from the Assignment description and Paste it into the answer box. Then they can fill it out by editing what they pasted in.
