Canvas & iPads - HELP!

Now that the new Canvas update has been sent out, stating that "student annotations do not stick," meaning that when a student edits a PDF (text box, highlighting, filling in graphic organizer, pen feature, etc.), none of their work can be accessed again from their iPad. Unfortunately, this was something many of us (especially English teachers, who have to follow IEPs in which many students require graphic organizers with all writing assignments) used on a weekly basis, the very least. 
Another feature we used a lot was "make a copy for each student" in Google Classroom. This was a way for us to put work on a Google Doc., and each kid could access their own copy of the document to edit. We could put things like questions for them to answer, tables for them to fill in definitions, etc. This function is also not available in Canvas. Is there a way around this? I have asked Canvas support about this, and they said it is not possible to their knowledge.
