For example, if the assignment calls for a submission of a pdf file and a word document, is there a way a student can submit both?

Currently, students can only submit one document to an assignment, but they can resubmit as many times as desired. So potential a student could submit a Word doc, and Excel spreadsheet and a PDF doc to the same assignment, but they would be managed as separate submission. This makes them challenging to grade as a single submission. But is can be done with a clever rubric.
There is a feature idea currently open for voting that covers what you are asking for. Check it out at Allow Multiple Submission Types on the Same Assignment
Canvas is also working on Assignments 2.0 that will permit this and much more. You can learn about the improved Assignments tool at Priority: Assignments 2.0

Hi, Greg, Kelley L. Meeusen has given you great guidance (thanks, Kelley!). I'll add that students can upload multiple files to a single assignment submission. The first of the two files uploaded will automatically preview in SpeedGrader's DocViewer, and the instructor can then click on the second one to view it in DocViewer (an instructor will see that under Submitted Files: (click to load) in the right pane of SpeedGrader.

If this is the direction in which you decide to guide your students, you can additionally restrict the file submission types to pdf, doc, and docx.
