If a teacher invites students using their school email addresses, and the teacher's class is not listed under "courses", how do the students accept?

When you receive an email invite to Canvas, you should follow the link in the invite which will offer you an opportunity to accept the invitation, or you will see the invitation at the top of your Canvas Dashboard.
If you don't see that invitation, then either the invitation was not sent or the course is not yet published (also why you don't see it in your Courses list.
This is the global Canvas Community, so we do not have access to your school's Canvas account nor it's individual courses, so we cannot troubleshoot this for you. You will need to contact your school's Canvas admin/support department for a definitive answer.

For our school Gmail accounts, we cannot access email. Is there another way to get to the "accept invitation" area not using an link in email?

If the student has a Canvas account that's associated with the email address, when they hit their Canvas Dashboard, a pop-up shows to Accept the course invitation.
If the student has never started their Canvas account, I think when they do create their account with the email address, it will maybe show all those invitations as well. Regardless, students should still create their Canvas account.
Otherwise, you can make the course open enrollment/self-enroll so they get the link to the course and sign-in that way, kinda the reverse of a specific invitation. How do I enable self-enrollment in an account and allow students to self-enroll in a course?
