I am wondering if there is a way to give two different quiz versions within one quiz category? In other words, can I give a quiz to students who have notes and a different quiz to those who do not have notes?
Yes you can by differentiating the two quizzes, but only when you know in advance which group the students would fall under. And really, it does not need to be much in advance if the quizzes are already built, because you are not actually creating "groups" in the Canvas use of that word. What you are doing is restricting quiz A for some individuals, and quiz B for the other individuals. When you do this, both quizzes will display in the gradebook, but for students who have not been assigned one of the quizzes, their score box is greyed out, and the possible points do not count towards their final grade.

I hope this helps,
