One of my students accidentally changed her profile language to Spanish and doesn't know how to switch it back. Is there a way I can do this for her? All of the assignments still show up under the settings that I select, but it is very confusing.

Sounds like something I would do; and in fact, it is something I have done.
This really is an easy fix you can help your student with, and you will either need to guide the student to fix or ask your Canvas admin to fix for the student, because you cannot access their account settings..............
You student can then go in and find where she needs to make the change. Since the English language choice will be listed in English, she should not be too challenged.
And that's how I fixed it myself when I changed my own account to Dutch.

I've never had this happen, although strange things have happened to our Canvas courses lately. Have you gone to the settings part in that class and made sure the language is correct?
