One or our teachers is looking for ways to back up Canvas quizzes, assignments, and discussions.
David, the best way to "back up" a quiz in Canvas is to export it and save it - How do I export quiz content from a course? The advantage of this format is that it can be imported into any Canvas environment (even the free for teachers version of Canvas) and will import into a course and work as a quiz in Canvas.
Yet, if the teacher just wants a print back up of the quiz you could use the following - Print Canvas Quizzes UserScript. The disadvantage of this is that you can't put this back into Canvas and have it work. So it will download a copy, but this copy wouldn't be able to be imported back into Canvas.

We have added Paperscorer, a Canvas add-on, which gives us the ability to print our Canvas quizzes for a variety of purposes. We use this option for students who require special accommodations and also as an offline backup. As a bonus, the accompanying bubble score sheet will automatically score and record results (if students are taking quiz offline).
