I want to be able to add a column to the gradebook where my instructors can manually type in a final letter grade. Is anyone currently doing this and if so, how did you get it changed?
The only custom column is the Notes column in the Gradebook, which is not visible to students.
If you have something else in mind you might want to search Canvas Feature Ideas to see if someone has already submitted a similar idea. If not, you can submit a new idea. Check out How to write a good feature idea submission.
If you have programmers you can work with, you could probably do something via the API.

The only workaround I have been able to figure out is to make an assignment, graded by letter grade, with no submission. Then, enter the letter grade as though it were a grade for that assignment.
This workaround has some drawbacks that I explain in the comments on this feature idea: Can't a letter grade just be a letter grade? Basically, the letter grade doesn't appear by itself in the gradebook so students can get confused. Also, it's weird to have "course letter grade" listed as an assignment, but that was the only way I could figure out to get another column in the gradebook.
Correct. But you need to use 0.0 (rather than 0) points. The decimal is important. (Unless something has changed recently.) A complete hack.
Interesting . . . what's the difference in Canvas behavior if I use 0.0 vs 0?
Well, I just tested and this hack doesn't appear to be working any longer. It's always been something that Instructure said may go away. I tried it with 0 and 0.0. Neither worked.

The workaround I posted was from last May 2015 and it worked ok then, but it puts a meaningless number into the column along with the letter. I'm attaching a tiny portion of the gradebook to show what I mean. The numbers seem to come from the course grading scheme but they don't factor into the grade at all. I've put the "course letter grade" assignment into an extra credit group that has a weight of zero.
At one time, you could create an Assignment > specify Text Entry > specify 0.0 points. The grade book column would then let you enter a raw alpha, such as 'A', 'B-' etc. It's not working as of today.
