If i have 30 students in my Class and i give an Assignment by stating the Due date plus Availability time of the Assignment, how do i Reactivate An Assignment for one student and not all students?
If the quiz had a limit on the number of attempts and the student had used all of their attempts, then giving them extended time will not give them extra attempts.
There are several places where you can allow extra attempts. I normally go to the quiz moderation page, but the list of ways is covered in this document from the Canvas Instructor's Guide: Once I publish a quiz, how can I give my students extra attempts?
Note that allowing a student additional attempts doesn't just give them the ability to review, it gives them the ability to retake the quiz. This will probably change their grade in Canvas. One thing you'll find in Canvas is that seemingly simple things sometimes have unforeseen consequences. While the Canvas Instructor's Guide gives some great instructions, they don't always list the things to watch out for.
If they did not take the assignment at all during the available time, then you use differentiated assignments as explained on this page in the Canvas Instructor's Guide: How do I assign an assignment to an individual student?
The short version is that at the bottom of the assignment where you set the original availability dates, there's an option to add additional assignments
You do that and then pick the student you want to set the assignment dates for.
