Our district is moving to the paid version of Canvas and we will have numerous teachers new to Canvas. Some people are saying the “non-tech” teachers should move to Google Classroom, therefore, I created a video showing new teachers how to start with Canvas by using assignments. The video begins by having teachers remove the left menus, next they create a welcome page and set it to the front, and finally I introduce ways to create assignments (calendar, module, assignment link). My hope is to stop the Google Classroom is easier noise.
Would you suggest a different approach?

Congrats on your district licensing Canvas! My backgrounds is mainly HigherEd and I've never used Google Classroom, but I'm still going to provide some of my thoughts on the issue. When I'm working with new Canvas users I try to get them to use the things most appreciated by students first. For us we hear that students want to have access to the Syllabus and to their grades. And for grades, you need Assignments so I agree with your approach of starting there. Point out the things that Canvas does but Google Classroom does not. My kids use Google Classroom and don't think there is any gradebook associated with it; so to me that would be a huge thing to point out. Being able to grade with rubrics should also be a selling point over Classroom.
Hopefully some others will also chime in with thought but I think you are on the right track.
