I have multiple student's discussion and assignment submissions not showing up. Why? and how does this get corrected?
Not showing up where? We need a bit more information to assist you.Have you verified that the students submitted? Often you will need to have your Canvas Admin look the Page Views for the students in the Admin pages.
What we have seen occasionally happen with assignment submissions is that when the student submits, it goes to their personal files in Canvas instead of to the assignment. Students can check their files area to verify. We just had one of these yesterday. It is rare, and there seems to be no consistent reason as to why.
I have never seen a Discussion post not display if the student posted it. But what I have seen way too often is a student claiming they did post. What I do then is verify in Page views whether or not they did.

There have been a number of students (in different classes) claiming to have submitted their assignments (and have verified at least some of them using images on their phone) and in speedgrader, I am not seeing them so I mark them as a 0. Students are saying they did submit but I don't see anything to grade them. Some claim to have contacted either Canvas or the school's OIT and have been instructed to load some kind of malware (anti malware?) onto their computer. This has happened to (drawing) assignments in two of my classes and discussion in one of my classes.

Do you know what web browser(s) your students are using when submitting assignments to you? Generally speaking, you and your students should be using an up-to-date version of either Google Chrome or Mozilla Firefox as your browser of choice. There are some things that just don't "play nice" with Canvas when using Internet Explorer or Edge...and this also includes submitting assignments. So, if your students are using IE or Edge, I would encourage you to let them know they should download Chrome or Firefox (both are free downloads).
