We are using the Canvas Student app (version 6.4.2) on iPads (iOS 11.3.1).
When we try to annotate a PDF with the Text Tool it is applying a white background. The white background at time overlaps the document's information underneath it. We would like to be able to change the Color Presets to be transparent like all of the other annotation tools.
In the past, it used to be transparent.
How can we change the Color Presets for Text?

Interesting issue you have discovered. I tried to do this on 3 different iOS devices using a few different version of the app and I have found something slightly different on each of them.
I definitely couldn't find a text color picker for text, only annotations. So, I had to use the presets.
As for the text color, I did notice you can reset the color preset which brought back the transparent background. You can reset a color by holding down on the color and wait for the Reset menu option to pop up. See my screenshot below.
I know this isn't an answer to your question, but it could be a temporary workaround for now.
I would suggest you contact your local Canvas support so they can create a ticket to have this looked at with more explanation. I'll do some research myself and post back here if I find anything out.
