Here is the really cool thing about Canvas account creation - Canvas does not have an email validator function, so you can substitute any fake email address you want. So you can create and account for John Doe, with an email address of firstname.lastname@example.org.
We create dummy test accounts using that very same trick, and we even use equally fake ID numbers. So John Doe could have an ID number of "johndoe" Canvas does not care.
If your users are using email or an ID number for their login credentials, then you will need to share their fake credentials with them so they can log in. Your users then have the ability to update their accounts with a real email address when it becomes available.
Do keep in mind that a valid email address is necessary for Notifications to work, unless the user has opted for just text notifications to their cell phones, and some third-party integrations use a valid email address as user identification. Otherwise you are good to go.
