Is there a limit to the size of an entry in rich text format of an assignment? In other words, can I assign as homework and number of questions to which the students type answers in the assignment block as free text?

As far as I know, there is no limit to the amount of text students can type in a text-entry assignment submission. Of course, we all know that there must be some kind of limit, but on a practical note it is unlimited.
However, I would advise that if you know student responses will be long, set the assignment to a file upload. With a file upload, you students can start working on an assignment in say Word, save it, go back to it, save it and go back again until it is finally done; then submit it. The text entry box does not permit save - student can only type, then submit. We have had lots of folks in the community complain that their work was not saved, and asking what they can do.

John, I agree with Kelley that making the assignment a file upload type holds numerous advantages over creating it as a text entry submission. One thing to keep in mind is the increasing number of students using mobile devices in general, and the Canvas Student App in particular, to complete their assignments. According to this recent discussion with a studentCanvas Text Box Entry limitations—the text entry box on the app is considerably more limited than the one available to students via web browser.
