This is my first tine using Canvas.
I was trained In Blackboard, Angel and Moodle.
So, the setup is similar, but I am just getting used to it.
I wanted to set it up with just my quizzes and lab practical grades. I am not using it to create a quiz.
And
When will I be able to enter the attendance?
Will I be able to see everything, once the class is formed?
That’s all I need for now.

If by "will I be able to see everything once the class is formed", you mean will you be able to see and use all Canvas course functionality once your course shell is created, then the answer is yes. However, Canvas course shells do not include any instructional content, that must be added by the teachers or course builder. But I think you get that since you have worked with other LMSs, and note the somewhat similar structures. Are you migrating content from one of those other platforms? If so, then you might want to join the LMS Migration Strategies focus group in this Community.
For each quiz and lab practical, create a Canvas Assignment with the same name as those quizzes and lab practicals, and set the submission type to "no submission". here are some guide lessons you will find useful.
You asked about Attendance, so I would suggest checking out the Attendance (Roll Call) Chapter of the Instructor guide.
I suspect you would also like to grade those quizzes and lab practicals, so I will also suggest you check out the Grades and SpeedGrader chapters of the instructor Guide. Specifically, get started with....
It seems like a lot, but you have online teaching experience and already know it's a lot in any LMS. That should get you started, and if you need anything, come back in here and ask. this is a great Community, and there are a lot of useful resources here, and lots and lots of friendly helpful people.

I am teaching 6 labs this semester.
And
It is my first time at this college.
I have taught them all before, at different Colleges. (So coursework, exams, presentations etc, are already on my PC. )
I just want to set up these classes quickly and add my items each week, so I am not overwhelmed.
These are what I am teaching. Luckily they are all labs at this college.
(1) Gen Bio
(1) A & P 1
(3) A & P 2
(1) Microbiology
All I want is to set up the 10 quizzes and 2 lab practicals columns. Set the weights (10 points per quiz) (100 points per lab Practical)
That’s all I need to start. Then I can add more stems as the semester moves on.
Is that easily done in Canvas?

Well,Karen , I responded to a new Admin last September, and you might want to read that response to him at New to Canvas Admin
I think it is easy, but it is easiest for those who remember that they are no longer using Bb, Angel, D2L, Moodle or any of their other past LMSs - "Toto, I don't think we are in Kansas anymore!"
If you don't expect Canvas to work like your previous LMS, and just start doing things the way Canvas lets you, then your task is quite manageable.
Make use of the Canvas Guides - they really do rock - and especially those guides I pointed you to earlier. And make use of this Community. there are so many helpful folks in here, and most of them are much smarter than I am, and frankly much better looking.

You are coming into this with the right attitude, and lots of experience. It also doesn't hurt that you are willing to ask questions, and make sure your questions are clear. I also like that you want to start simple until you get comfortable, advice I always give my own faculty.

I am not sure what you mean by.....
The Canvas Gradebook is already "set-up" and anytime a teacher (or other course builder) creates a graded activity in Canvas, then Canvas automatically adds those items as grading columns in the Gradebook.
Are you asking because your students will not be submitting assignments, taking quizzes or participating in discussions directly in Canvas; but you still wish to use the Gradebook? If that is the case, then you would still create your assignments in Canvas, but set them to "No submission", and this will create a Gradebook entry. You can then add the grades into the Canvas Gradebook directly or through SpeedGrader. To do this for on-paper quizzes, you would also create those as no submission assignments, rather than as Canvas Quizzes.
