What is the best way to turn a quiz that was built in Canvas and move the questions to the question bank in Canvas? It is very time-consuming to copy and paste from quiz to question bank.

You're in luck! The quiz questions that you've already put into your quiz are in a bank of Unfiled Questions automatically.
So now all you have to do is create the banks you want and then move the questions from unfiled into the appropriate bank.

So, if I move the questions from the "Unfiled" area to a new question bank, what happens to the original quizzes? If I modify the questions in the new question bank to use as part of a larger exam, for example (points, answer choices, slight wording, etc.), will that also change the original quiz; or, is the original quiz a totally separate question bank within Canvas somewhere and will remain unchanged even if I modify the moved questions in the new question bank for the larger exam?

The questions in the original quiz stay as they are because the quiz has questions and is not pulling questions from a bank. So please do move the Unfiled questions around and sort them into new banks, get organized, have at it!
The only time quiz questions auto update from changes to the bank questions is when you link to the question bank rather than find quiz question from the question bank.
