How do I delete all students from previous semesters?
It depends on what permissions you have. You can go to People and then click the settings icon (the three vertical dots) on right of each student and select the Remove From Course option. You can also go to Settings > Sections Tab and click on the specific section. This will allow you to click the "x" by each student to unenroll them.

In addition to the information that Robbie Grant has provided, you may want to check with the local Canvas admins at your school to see if this is allowed or not. For example, at our Technical College, we do not remove enrollments after a course has ended. Here are a couple situations I can think of why keeping enrollments in a course would be beneficial:

Echoing Chris Hofer, you likely do not want to delete past enrollments in your courses. Universities typically create new course shells for content and new sections for enrollments each semester. You can copy course content for prior semesters into the new one. (See How do I copy a Canvas course into a new course shell?)

Everyone has given you good advice. In most states, it is not only undesirable to delete students out of past courses, it is also illegal. Retention laws require maintaining this information (enrollments, submissions and grades) for a specified period of time.
