I realized after I set up my Discussion Board assignments that I forgot to click Graded so I can mark the assignments as Complete or Incomplete.
I've made the changes, but I'm still not seeing the assignments in the Speed Grader.
Am I not able to make that change after students have already submitted their posting assignments?

Welcome to the Canvas Community. Thank you for posting your question. I just tested this out myself, and I was able to see the column in the Gradebook for a discussion topic that was originally not set as graded and had 10 replies in it. Make sure that the name of your discussion topic matches the name you are looking for in one of your colulmns in the Gradebook. Also, if you want to jump directly to the SpeedGrader from the discussion topic, you can do that, too. Just go to your discussion topic, and next to the "Edit" button, you'll see a three-dotted "kabob" icon. Click that button, and click "SpeedGrader". You should be taken directly to the SpeedGrader with all your student discussion posts for that topic.
