Grade Override Options

I am working with a number of our institutions on the new Gradebook. One of the positives is the ability to override a grade. However, it appears to me that the grade override ONLY lets one change the calculated grade for another grade that is available in the grading schema. So, one could override a B to give the student a B+.  In our case, the most need is to allow the professor to give the student an INCOMPLETE -- which is obviously, not a part of the grading scheme (nor could it be, as the number of points earned is really irrelevant).  Is my testing correct - that the override ONLY allows you to substitute a grade from the schema for the earned grade.
