I am logged in through my new school, but it says I’m logged in with my old school’s credentials and I start my new school’s quarter in Monday, will the instructor update this? I can’t find any help for me to fix this on my own.

I'm not sure I understand what's happening with the different schools and I'm guessing because it's a school specific thing and not a Canvas specific thing. My recommendation is to (1) contact the Instructor of your course and (2) submit a help ticket with Canvas - to do this click on the Help link in Canvas and then Report a Problem.
