How to set up conference where students from other disciplines can join?
The Conference Tool which is built in to Canvas will only allow people enrolled within the same course or group to join a session together. So you would need to find a way to have everyone enrolled in a common course or group. Some schools allow instructors to create their own courses and some allow them to enroll people as well; I'm really not sure how things are set up at your school however so you probably will need to consult with your local Canvas admins to find out for sure what is going to work in your case.
I will point out that many web conferencing tools such as Zoom do have free account options which might suit your needs. The free plan for Zoom allow up to 100 people to join but it does limit the session to 45 minutes in length. Still, for free that is not bad and you'd be able to have anyone join with only you needing to create an account. https://zoom.us/pricing

I would also recommend Zoom for conferencing too. I believe you can have up to 50 people on video, which from past experience, works really well. If you want to go more than 40 minutes just have people log back into the same room immediately. My team and I did this for almost a year as we were evaluating Zoom a number of years ago.
