I created an assignment but for reasons that I don't know, it became a moderated assignment and now students can see their grades. I can not "un-moderate" it since I did not know how it was even created.
Hi tony tan Welcome to the Canvas Community. And yikes! What a way to be introduced to the (rather cool, actually) function of moderated assignments. Indeed, once any grades are input you can no longer disable the checkbox on the assignment settings.
I am a wee bit confused by your question, however. You say "now students can see their grades" but I have to assume--if it is moderated--that you really meant to say "now students can't see their grades," because by default a moderated assignment will be muted until final grades are posted.
First, any assignment that was created as a moderated assignment must have a final grader; you can see this name when you edit the assignment. I will assume that your name is there if you are the only instructor for this class. (If your name is not there, then the instructions below will apply to whomever IS listed there.)
The official documentation for this process is covered here, although the screen captures will be a bit different since it shows that there is at least one grader and final grader.
Assuming all grades have been submitted and you are ready to release the grades to the students, the following steps must now be done:

Next, you certainly want to find out how this was done unbeknownst to you, since there are several steps involved in creating a moderated assignment, not the least of which is that to even have the ability to create a moderated assignment it must currently be an opt-in feature at the course level. And then (as you can see on the edit screen), a final grader must be named as well as a number set for the number of graders (TAs, essentially) to grade it. But perhaps this was done by a TA or a course designer. The reason I mention this is that if you do NOT want this in the future, be sure to mentally note this, since--as I found out when helping to answer an earlier question in this Community--the moderated status WILL remain if this course is imported to another course in the future for this specific assignment.

Thank you so much for taking the time to respond. I appreciate your help! You are correct, I made a mistake in my description-the students could NOT see their grades. For some reasons, the Canvas at our university did not have a “moderate button” right next to the “Edit button”. Yesterday I called my university’s IT support. They were able to make the needed changes from their end for me but told me that there was no way for me to make the changes, which is odd.
Hmmm; that's rather odd behavior...it sounds like (perhaps) the creation of moderated assignments was somehow enabled account-wide. You may want to follow-up with them later; not seeing a MODERATE button definitely means (indeed) that it was done by someone with higher rights than you. Anyway, I'm glad that it was resolved one way or another, Tony! (And call me Ken....besides, I'm not a Dr.! )
