Is there any way I could add a certificate of completion to the end of my course? Something students can either print or email to another source?

The way I accomplish this is to create a final module with the cert in it, then set the module to only become available if the participant achieves a specified score in the previous module. Clumsy at best, but there is another option.
Badgr is now available for all Canvas users. Below are some links to some usefull informatiom. Not only are badges portable, but the metadata can document the criteria for earning the badge.

I went with the Badges way, but am struggling to understand how it works! I would like for it to pop up with specific date, and name of student who completed the course modules at the end. Is there a way to do this?

With Badgr, you get an instructor dashboard, with a "Leaderboard" tab that will display the badge earners. The example below shows the students down the left column, and the module badges across the header-row.
From the Progress tab, you can click on any earned badge and to open a context card to see details that include date earned, the criteria, the issuer and more. From that context card you can also email the student directly, or even revoke the badge.
Make, or have your Admin make you a sandbox, and some dummy students (sorry, I already have a job), and try it out.
