I want to put a sign up sheet for scheduling meetings with students in canvas. Where do I put the sheet and can I just do a word document for the sheet?
There are some ways you can do that.
The way that I like the most is to use Canvas' own Scheduling tool that you can find out more at How do I add a Scheduler appointment group in a course calendar?.
You can also have a Google Sheets (or similar) shared with your students and post an Announcement telling them to sign up.
