How do I delete a student once they quit
If your school hasn't disabled this option for teachers, you can just go to the "People" page, look for the student's name, click on the three dots on the right side of the screen and then select "Remove From Course".

In addition to the information that Lucas Moreira provided to you earlier this afternoon, there may be policies in place at your school that your local Canvas administrators have put in place where they do not drop students from courses once the course has ended. When a student is completely removed from the course, it removes all the student submissions, too. But, if the student were to ever challenge a grade in the course, you would then have to re-add the student back into the course so that the homework submitted re-appeared in the course. Ultimately, you're going to want to check with your local Canvas administrators about any rules/policies that they have regarding enrollments to see if they would permit you to drop students in your course.
