What is the difference between Assignments and imported assignments?

As close as I can tell, because there is no guide for this, all assignment imported into a Canvas shell from another Canvas course are automatically loaded into an Imported Assignments group, to await your final determination of what groups you wish to create.
Assignments is the default assignment group loaded into all Canvas course shells.
In Canvas, all assignments (quizzes, assignments, and graded discussions) must be in an Assignment Group, and the default one is preloaded when a shell is created. Instructors and other course designers can then create the groups they want, and load the assignments in those groups. For example, I have a participation group, a quizzes group and an assignments group.

I will simply add to Kelley L. Meeusen's good direction (since I was about to answer myself! ) that this is mentioned on this specific page under the Import Limitations heading: What is the Course Import Tool? whenever partial imports are done:
When selecting individual assignments, assignments are placed in an assignment group called Imported Assignments. However, assignments can be moved into other assignment groups as necessary.
If I had to offer you an answer as to "why," the likely reason is in case you have assignments with the exact same name already imported. While this is generally not a good idea and is also mentioned in notes higher up on the page (" Importing a course more than once may have unintended consequences"), this is a safeguard put in place for you the first time you do the import.

I knew that I had at sometime, somewhere read an explanation; but dang if I could find it when I needed it.
I had to hunt for it, too, Kelley L. Meeusen! I remembered, though, that it was not in an obvious location from the last time I needed to find it to try to explain it to a faculty member.
I don't know if this address reaches all who participated in the answering of my question, I hope it does.

The main question I still have is, can I just leave the setting 'Imported Assignments'?
Will students still be able to access and take the quizzes?

First, yes your latest post reaches everybody who posted before on this topic.
Actually, for the most part, assignment groups are invisible to students. You can use the default "Assignments" or the newly created "Imported Assignments". Don't matter at all.
The one place where students will see your Assignment Groups is in their grade reports. The Canvas Gradebook will create a sub-total column for each group. So my suggestions would be to simply drag all of your graded content into the default Assignments group if you are just going to use the one.
Below is a screenshot showing the Assignment Group totals on a student grade report. The blue entries are individual assignments which are followed by the black assignment group sub-totals...........
