How do I change an existing account role from Faculty Evaluator to Student?
In Canvas, Student is not an account-level role.
I am suspecting that you have an account-level user who is now, or will be, a student. The role of student is predefined in Canvas at the course level. This creates challenges when a user has an account level role and they need to be a student in a course, because when they log in, regardless of their course-level role, they will still have account-level permissions in that course.
This has been a topic of discussion in this Community since the community began! I am trying to find a discussion of work-rounds, but I must be keyword-challenged today.
Essentially, I think you have two options.............
Others will likely have different perspectives and offer different solutions.
The person I'm training is a new Dean, and I was trying to change his role to teacher so he could work the sandbox I created for him. I was hoping the teacher role would provide him the ability to add sandboxes to his dashboard.

If you permit teachers to create courses, then that should work for him. The only place I have found Canvas' unconventional roles/permissions structure to be particularly challenging is when someone with higher-level role needs to also be a student. You might have been able to tell that I struggled to even describe that structure.
