I want students to be able to log in their time spent in an open lab environment where they need to have a certain number of hours logged within a certain tine period.

You could easily use an embedded Google Form for students to document their time, and then use it's associated Google sheet to track the results, but I would not bet the farm on the accuracy of the data.
However you set it up - check in/check out, log total minutes, ect.; none of those recorded totals will be reliable. When I leave work this afternoon, my computer will show that I have been logged into this Canvas Community for 17.5 hours on 8/1/19 - do you think I will have been actively engaged that full time? Or, I check in on a form at 6:30 am, then check out at 4:30 pm - nope, I spent the whole day drinking coffee and reading my Kindle, or playing games on my phone, or having fun in Facebook.
