I want to copy course material from a course I taught this summer - I do not want the course summary or summer due dates - I just imported a course and all the summary and dates came with - can I reset?

Just be aware that if you reset your course, it will completely wipe out all the contents, and you'll have to re-import from your Summer course again following the Guides that I'll link for you:
But, there is also another option for you. You might be interested in a "Canvancement" (Canvas Enhancement) developed by one of our own Community members, James Jones, from Richland Community College in Illinois called Adjust All Assignment Dates on One Page. James' directions (both written and video tutorials) tell you how you can use a Google Spreadsheet to adjust all your assignment due dates on one screen. Thus, you would not have to reset your course and re-import the content again. You might consider giving that a try first before you go down the road of resetting your course.
Also, regarding the "Course Summary" found on your "Syllabus" page...that information will display on your course for all assignments in your course. Per this Guide, How do I use the Syllabus as an instructor?:
The Syllabus is automatically generated for the course and contains a list of assignments and events. Assignments are indicated by the Assignments icon , and events are indicated by the Calendar icon . Non-graded items with a to-do date show the to-do date in the syllabus . All assignments (unpublished and published) are listed in the syllabus for instructors, but students only see published assignments.
