You have several questions here. Let me see if I can address them in order.
1. Yes, the embed code you are using should function the same regardless of whether or not you are employing it within a table.
2. It sounds like you are using a course card image. In this document, How do I add an image to a course card in the Dashboard?, the following recommended resolution is listed:
"If your institution allows, you can upload an image to display behind the course card in the Canvas Dashboard. Accepted images include JPG, JPEG, GIF, and PNG files. For best practice, images should be approximately 262 pixels wide by 146 pixels high."
Have you tried 262x146?
3. You should be able to link from one Canvas course to another, providing you are using full urls and the course you are trying to link into is open and publicly available or the person trying to follow the link has access to both courses.

I have you tried 262x146? I opened the file in paint, did select all, resized the image, saved over the old file and re-uploaded it to canvas. The image is still too large.

I took the liberty of looking at the "uncommon schools logo" image in your course and found it to be 526x230 pixels per inch. I took this image and used it as the course card image in my own sandbox course and sure enough it appeared cropped in the dashboard view. I then edited a version to be 262x146 and tried loading that. It appears fine with the border and everything when saved as a smaller file. I did not want to attach the before and after images here to preserve your privacy. If you would like for me to do that or to send them to you directly, please let me know.
