I made the mistake of setting up my account as an instructor and not a parent. Can I change this, or can I delete my current account and make a new one for a parent?
In Canvas all account are technically the same. There are no teacher, student, admin, or parent accounts really, it's how they get enrolled in a class or a system that control what kind of access they have. So one account can be a student in one course, teacher in another course, and parent in another one.
I suggest you talk to your school to see if perhaps you were added to a course with the wrong permissions. There shouldn't be a need to delete and recreate a different account, they might just need to change the enrollment if is it not currently set up correctly.
Having said that; it's possible that your school has some sort of system outside of Canvas which controls account creation and does make a distinction. Again, talking to your specific school about how they manage thing in Canvas is going to be the best way to proceed.

The other thing that may have happened is that you could have created a Free For Teachers (FFT) account with Canvas by visiting canvas.instructure.com. When you do, you're visiting a unique "version" of Canvas, and when you create an account here, you're automatically an instructor.
With your child's district, there's usually a link on the home page. Each district has it's own home page, and you'll likely find a link from the district or school's home page. (How do I log in to Canvas as an observer? + How do I sign up for a Canvas account as a parent? will help, too!)
