Great question. I'm assuming what you mean by reset is that you want the one student to be able to take the quiz (after the due date has passed, after the other students have taken the quiz). If so, it's often referred to as a differentiated assignment but with my faculty that I work with I usually say "re-assign."

1/4 way down the page on the section that says "Assign to a specific student" is where you want to start.
Just make sure that you click on the "+Add" button and don't remove the assignment for "Everyone/Everyone Else."
