Hi Blue - If an assignment is available to students (How do I add or edit details in an assignment?), they can resubmit as many times as they feel appropriate. The instructor can see each submission in a dropdown in SpeedGrader. If I'm not quite understanding your question, I apologize!

The instructor would need to adjust or remove the availability dates temporarily. If the assignment is only available until a certain date and time, students can't submit beyond that time.

I'll just add that this Guide, How do I submit an online assignment?, shows an example (look under "View Submission" about 3/4 down the page) of what the "Re-submit Assignment" button looks like in an assignment.
